Slow Cooker Beef Fajitas

Mexican food is one of our favorite cuisines for easy and flavorful meals. Easy Slow Cooker Beef Fajitas Collage - haphazardhomemaker.comMaking it in slow cooker is even better! Add in the fact that you can change up the flavor even more by interchanging beef, chicken or pork, it’s a win-win situation. There are only 4 ingredients for this delicious recipe and I am sure you will want to add this recipe to your meal rotation. Directions for homemade Spanish rice and refried beans are included below the Fajitas recipe.

Slow Cooker Fajitas Ingredients:

  • Fajita seasoning (1 package or 2 Tbsps of homemade seasoning – recipe below)
  • 8 oz. salsa (a little more or less to taste)
  • 2# of beef, cut into 1/4″ strips (or chicken, or pork)
  • Frozen pepper and onion strip mix (approx. 26-28 oz. total) You can use 3 bell peppers and 2 large onions, if you prefer.

Directions:

  • Pour the salsa into the slow cooker
  • Stir the Fajita seasoning into the salsa
  • Add the meat and stir until the meat is coated with the seasoned salsa
  • Stir in the peppers and onions
  • Cook on HIGH 3 – 4 hours (or on LOW 6 -7 hours)

When the beef mixture is fully cooked, warm flour tortillas in a microwave by stacking several tortillas on a plate wrapped with a damp towel or paper towel. Microwave on high for 30 – 45 seconds. Corn tortillas can be heated on a griddle or skillet set on medium.

There is quite a bit of “broth” in the slow cooker after cooking. As I spoon out the fajita mix for serving, I drain the liquid off of the spoon against the side of the slow cooker.

Quick Spanish Rice

While the Fajitas were cooking away in the slow cooker, Easy Spanish Rice -haphazardhomemakers.com I made up a quick Spanish rice, using the rest of the rice I cooked a couple of days ago, so there was only 3 servings. But the following directions will make enough for 5- 6 servings of 1/2 cup each.

  • 3 cup cooked rice
  • 1 cup water
  • 1 heaping Tablespoon Fajita seasoning.

Stir the seasoning into the water and bring to a boil. Stir in the cooked rice until evenly coated and simmer for a couple of minutes. Taste to be sure it isn’t too “hot” tasting. If it is, add brown sugar, 1 teaspoon at a time, until the heat level is desirable.

Homemade Refried Beans

If you start with cooked beans, these take just a few minutes to make, and they are just as good as those served at our local Mexican restaurants. Directions for homemade refried beans are here. I keep 2-cup bags of cooked beans in the freezer, but you can also use drained and rinsed canned pinto beans. By the wayI usually have a can of refried beans stashed on the pantry shelf for backup. Just sayin’

Homemade Fajitas Seasoning in a Jar

Measure all of the following ingredients into a mason jar and shake well before each use.  Two (2) slightly heaping tablespoons is the equivalent to one package of a ready-made seasoning packet, without all of the unnecessary ingredients.

  • 3 Tbsp chili powder
  • 2 Tbsp cumin
  • 1 Tbsp salt
  • 1 Tbsp pepper
  • 2 teaspoon oregano
  • 2 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 3/4 – 1 teaspoon red pepper flakes
