Parmesan Roasted Green Beans

I’m trying to use up vegetables I have in the bottom of my freezer, so that I have room for this year’s harvest. Well that, and frozen vegetables lose nutritional value after awhile when frozen. While digging through the baskets, I found several quart bags of green beans, some cut into pieces and some not.

First A Pot of Beans

I put three bags of the cut beans in the slow cooker with a cut up onion, salt and pepper,  plus several pieces of country ham. They cooked on high for about six hours today. We can get a lot of mileage out of that pot of beans.  When I reheat them for dinner, I’ll start early enough to throw a couple of cut up potatoes in with the beans. We’ll have them with fresh tomato slices and cornbread tomorrow evening for dinner. After that, we’ll have plenty of leftovers for another meal.

The fourth bag was long beans that I didn’t break before freezing, because I wanted them for oven roasting. They are so quick and easy to make, and definitely Yummy! The perfect side dish to any meal.

Found Mushrooms

I also found a bag of frozen mushrooms with just a few left in the bag. I decided to throw them into the roasted beans, too. Until I bought this bag a few weeks ago, I did not know they were available in the grocery freezer section.

NuWave Oven Friendly

It just takes a few minutes to prepare these Parmesan Roasted Green Beans for the oven, then 20 minutes or so to roast. I’ve included both NuWave Oven and regular oven directions below.
I suggest you have the rest of the meal ready to serve when these are done roasting, so they all make it to the table. Just sayin’… They are that good!

Parmesan Roasted Green Beans

Ingredients:

  • 1# fresh green beans
  • 2 Tbsp olive oil
  • 2 Tbsp grated Parmesan cheese
  • 2 Tbsp bread crumbs
  • 1/2 tsp sea salt 
  • Optional: mushrooms
  • Optional: a little extra Parmesan cheese and bread crumbs to sprinkle on top halfway through cooking.

NuWave Oven Directions:

  1. Toss the green beans and other ingredients together in a large plastic bag or a large bowl (I coated the beans in the liner pan)
  2. Spread the beans in the bottom liner tray
  3. Roast for a total of 24 minutes; Roast 12 minute at 350°, stir and turn the beans, then roast another 12 minutes. (If desired, sprinkle a little Parmesan cheese and breadcrumbs on top of the beans after stirring at the halfway point.) 

I sprinkled a little Parmesan cheese on after cooking…it wasn’t needed. But just look at those semi-crispy roasted beans with a light coating of olive oil and the lightly toasted bread crumbs and Parmesan cheese.

Oven Directions:

  1. Preheat oven to 400°
  2. Toss the green beans and other ingredients together in a large plastic bag or bowl (using the plastic bag saves washing an oily bowl)
  3. Spread the green beans on a large baking sheet.
  4. Roast for a total of 20 minutes; roast 10 minutes, stir and turn the beans, then roast another 10 minutes (If desired sprinkle a little Parmesan cheese and breadcrumbs on top of the beans after stirring at the halfway point) 

Note: These may need to be roasted for an additional 10 minutes.

  1. They sound great to me. Being on keto (low carb), I could substitute the bread crumbs for crushed pork rinds or something. I would need to experiment a little. I love green beans any way I can get them.

    1. Absolutely substitute the crushed pork rinds! I don’t know if I’ve seen where you mentioned that before, or someone else, but it’s a great idea! I think I’m going to start keeping a bag of them for this kind of dish. Thank you mentioning it! 🙂
