My Hubby is my official Taste Tester. We came together later in life, so we were both pretty well set in our ways, and our taste buds were firmly established. Because of that, we’ve had an agreement since long before we were married, that if we didn’t like something that we needed to speak up and we needn’t take it personal.
We have done pretty well living with that agreement.
However, even though Hubby is not really a sweet-eater, I was pretty confident he would like the sample muffin.
The conversation went something like this:
Me: Taste this muffin, and let me know what you think.
Hubby (after finishing said muffin): This is good. It would go great with a cup of coffee or a glass of milk.
Me: I’m glad you like it! It’s an Oatmeal Muffin.
Hubby: I don’t like it.
Sometime later…
Hmmm…for someone who didn’t like it, I’ve seen him come out of the kitchen at least a couple of times with a muffin in hand. So I guess it passed the “picky husband test”.
Easy Oatmeal Muffins

Ingredients:
- 2 eggs
- 2/3 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1 cup flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- Optional: 1 teaspoon cinnamon
- 1 cup oatmeal (Old Fashion is best)
Directions:
- Grease muffin pan (or use cupcake liners for easy clean-up)
- In medium bowl, mix together eggs, brown sugar, vegetable oil, and milk
- Stir in flour, baking soda, baking powder, cinnamon and salt
- Mix in oatmeal
- Pour batter into muffin cups
- Bake 18 – 20 minute in 400° oven until golden brown, or toothpick comes out clean
To keep the muffins fresh and moist to enjoy later, let cool and cover tightly.
Don’t forget the butter!
Quick Tips
To save a little time, mix up the dry ingredients in a mason jar ahead of time and put in cabinet. When ready to use, dump in a bowl, add the wet ingredients and mix.
Make a double batch and put a few in the freezer for another time. Or take some to a neighbor or friend.
