Christmas Cracker Candy

AKA: “Cracker Toffee”,  “Saltine Bark” or “Christmas crack.” Cracker Candy is super easy to make! Crunchy, chocolate, brown sugar toffee & my optional caramel layer…Oh, my! These are so addictive! Just 15 minutes from start to finish (plus an hour or so to set up), it’s a perfect treat during the busy holiday season, or for a quick teacher, neighbor and co-worker gifts.

There is only four ingredients for the basic recipe, and you probably have most of the ingredients at home already. I like to buy bags of chocolate chips, coconut, walnuts and pecans, etc when they are on sale and keep them in the freezer, so that quick and easy treats like this can be made without a trip to the store.

Ingredients

  • 1 cup butter
  • 1 cup packed dark brown sugar
  • 1 sleeve (about 40) saltine crackers (or graham crackers or Ritz-type crackers)
  • 1 pkg  chocolate chips (milk or semi-sweet)
  • Nonstick cooking spray (or use a little butter)
  • Optional toppings: flavored baking chips (caramel, peanut butter, etc), chopped pecans, walnuts, peppermints, candy canes, M&Ms, sprinkles, coconut, etc

Directions

  1. Preheat oven to 350° F. Line a large baking sheet with aluminum foil. Spray the foil with nonstick cooking spray, or use a little butter to grease the foil to prevent sticking.
  2. Arrange the crackers in a single layer. Pull the sides up the foil up if needed to keep the crackers close together. 
  3. Melt the butter and brown sugar together in a small saucepan over medium heat. Simmer for 5 minutes, stirring constantly. Immediately pour over the sugar mixture over the crackers and using the back of a large spoon, immediately spread it to cover the crackers completely. (my heat was a little high for the pan in the middle picture above)
  4. Bake for 4 -5  minutes in the oven. Turn off the oven heat. Remove the pan from the oven and immediately sprinkle the chocolate chips on top.
  5. Let rest for 3 – 4 minutes until the chocolate has melted. Quickly spread the chocolate over the toffee. If need be, place the pan back in the oven for a minute to finish melting the chocolate.
  6. Top with any optional toppings, if desired.
  7. When the topping has hardened, remove the cracker candy from the foil lined pan. If you need to it to set up quickly, put the cooled pan in the fridge for an hour or so. 
  8. Break into pieces, if desired.

Storage: Not that it lasts that long around here, but Christmas Cracker Candy will keep about a week in an airtight container on the counter (or under the tree, if it’s a gift) and about 2 weeks in the fridge. I’ve read that it will keep 3 – 4 weeks in a freezer bag in the freezer. I’ve not had the opportunity to verify that, though, because I have no willpower…

As you can see above, I made up a mixed tray of Christmas Cracker Candy to take to a Christmas Party tomorrow.. The graham crackers have chocolate and coconut, the middle section is just chocolate and the right side has caramel chips spread with chocolate, then a few caramel chips on top. They all have the buttery toffee layer, which is amazing! And they are all delicious!

    1. Three ways to nor eat too much…1) make it just before taking to a party, 2) divide the recipe in half, or 3) put it in single serve portion bags and ask a trusted neighbor or friend to dole it out. They will no longer be trust-worthy, but you wouldn’t be eating too much. 😀
