Christmas Dinner for Two

It’s just the two of us for Christmas Dinner this year, but we are making it special anyway! Families don’t always have the ability to be together and who wants to spend hours preparing a magnificent feast with all of the trimmings for only two people. Plus having to make the decision of which sides to leave off the menu. Sorry relish tray, stuffed celery and deviled eggs. Oops! Hubby insisted on deviled eggs.

Although the gist of this post is dinner for two, it actually provided 4 good size meal servings plus a couple of sandwiches.

Although ham is usually the star of our Christmas Feast, this year we opted for a simple meal with a whole turkey breast roasted in the NuWave Oven, easy sheet pan candied yams, my Parmesan Roasted Green Beans, cranberry sauce and dinner rolls. Super easy and minimal cleanup!

How much Turkey?

When figuring out how much turkey to cook, the best rule of thumb is one and 1/4 pounds per person of bone-in turkey breast, and about 3/4 pounds of boneless turkey breast per person.

However, if you want to have leftover turkey, you’ll want to cook a bigger turkey. Just saying…..

NuWave Oven Roasted Turkey Breast

Prep 5 minutes     Serves 6 – 8 Print recipe

Cook time: Fresh 12 -14 minutes per pound.
(Frozen 15 -17 minutes per pound)

Ingredients

  • 6 -8 pound turkey breast
  • 4 tablespoons butter (or 1/4 cup olive oil)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon paprika

Tip: mix the spices in a small dish, and then use to season the turkey.

Directions

  1. Rub turkey with butter (or olive oil) and half of the spices.
  2. Place turkey on 1 inch rack breast side down, add extender ring to the tray and put the dome in place.
  3. Roast turkey on High (or 350°) for 12-14 minutes per pound.
  4. Half way through the cooking time, turn the turkey breast side up, add remaining seasoning and finish cooking.
  5. Use a food thermometer to insure the minimum internal temperature has reached 165 °F for safety.
  6. Let the turkey rest for 15 – 20 minutes before carving to allow juices to set.

While Hubby was roasting the Christmas Turkey, I prepared the sweet potatoes and green beans for the oven.

Easy Sheet Pan Candied Yams

There’s really no recipe for this dish, because everything is approximate and can be adjusted for taste. These directions made enough for 5 – 6 servings.

Peel 2 medium large sweet potatoes or yams, then cut them in 1″ slices. Then cut the slices in such a way ending up with a sheet pan full of mostly 1″ cubes.

Sprinkle 2 -3 tablespoons of olive oil over the potatoes and use a basting brush to make sure the pieces are evenly coated.

Sprinkle about 1/3 cup brown sugar evenly over the yams. Roast in a pre-heated oven at 350° for about 30 minutes, or until the yams are tender.

Add a couple of handfuls for miniature marshmallows over the top, and roast another 5 – 10 minutes until the marshmallows are slightly browned.

Tip: Heat packaged dinner rolls in the oven while the marshmallows are melting.

  1. It’s just the two of us this year as well. We had one Christmas together, and then we’ve had 34 with children! So full circle for us. In a way I’m looking forward to it. Maybe because, let’s be honest, it is a lot of work. But I will certainly miss a lot of merriment. Great meal idea. We’re doing a London broil. Merry Christmas!

  2. Your meal looks wonderful! Have I ever mentioned how much I LOVE my NuWave? It’s my favorite kitchen tool. We went out for Chinese last year but stayed in and had Chinese this year.

    1. Thank you! No you didn’t mention it. 🙂 We use it a lot for meat and casseroles. I’m going to have to take the time to go through the cook book that came with it, because I know it can do so much more.
      Chinese is good. Isn’t that what people always have, if they don’t have a traditional Christmas dinner? 😀

    1. Thank you. We don’t have any family around, so I try to make holiday dinners special for the two of us. We do have invites to friends homes, but we just aren’t as tolerable of all of the commotion with lots of people kids anymore like we use to.
