Healthy 2 Ingredient Cookies (plus Optional Add-ins)

In keeping with my New Year’s Resolution…..Goal….Intention, and because I am a snacker, I thought I’d try to make me some 2 Ingredient Cookies, aka Breakfast Cookies. I am always hungry, which makes me hangry at times. I wanted needed a guilt-free real-food snack that simulated a familiar snack, but didn’t require any odd-to-me substitutes.

My favorite go to snack is cheese and crackers, or peanut butter and crackers. That’s assuming there are no cookies or candy in the house, which there rarely is because I have no self-control. Anyway, I spent a good hour going down one rabbit hole after another on Pinterest, trying to find the couple of 2 Ingredient Cookies recipes I thought I pinned because they looked so good!

So recipes found, and off to the kitchen I go. I mean, how hard can it be? It’s just 2 ingredients. I literally spent 2 minutes stirring up each batch and getting them formed on the baking sheet, then baking approximately 15 minutes.

First Batch Review

My first attempt was just simple basic cookies with no additional spices. I made 2 batches of 8 cookies each, one with banana and raisins, and one with applesauce and a dab of peanut butter. These were super easy to make up and they did kind of looked like regular cookies. After tasting one of each, the song ♫ “That don’t impress me much” ♫ by Shania Twain popped in my head. (Two points if you sang those words!)

They kind of grew on me though. Flavor-wise, the banana flavor definitely came through on the one batch and I didn’t really taste the applesauce in the other. They definitely needed spices added to them. The texture was really different, not terrible, just different. With all that being said, according to comments on other recipes found online, kids love them!

Second Batch Review

This time I made one batch with a banana and one with applesauce, then divided the two batches in half to make four different kinds.

  1. Oatmeal and banana with vanilla, cinnamon, nutmeg
  2. Oatmeal and banana with powdered ginger, coconut
  3. Oatmeal and applesauce with orange extract, dried cranberries
  4. Oatmeal and applesauce with vanilla extract, cinnamon, peanut butter

These turned out so much better! They definitely needed the spices and flavoring. They had a better consistency and texture, and the flavor was good, although not as sweet as traditional cookies.

Considering these are made with healthy foods, low in calorie and filling, I think they are a keeper in the recipe file. It’s a perfect way to use up those over-ripe bananas on the counter, too.

Healthy 2 Ingredient Cookies (plus Optional Add-ins)

Prep 2 – 3 minutes Bake approx 15 – 20 minutes Makes 8-10 cookies

Ingredients

  • Fruit base – choose ONE: 1 large soft banana (mashed) or 1/2 cup unsweetened applesauce (I used a 4 oz snack cup)
  • 1 cup rolled oats (quick or instant)

Tip: I put about 1/4 cup of oats from each full batch in my small drink maker and ran it for about 1 minute to make oat flour.

Optional Add-ins

  • 1/4 -1/3 cup total of one or a mix of the following: raisins, dried cranberries, chocolate chips, chopped dates, chopped nuts, shredded coconut
  • Dab of peanut butter, about 1/4 cup or 2 large spoonfuls
  • 1/2 – 1 tsp total of one or a mix of ground cinnamon, ground nutmeg, pumpkin pie spice mix, apple pie spice mix, vanilla or other extract

Directions

  1. Preheat the oven to 350°F/180°C.
  2. Mix the oats and fruit until well-combined.
  3. Stir in optional add-ins.
  4. Drop teaspoonfuls of the dough on a greased baking sheet, flatten to 1/4 inch thick
  5. Bake approximately 15 – 20 minutes.

Give them a try and I’ll think you will be pleasantly surprised!

      1. You are so welcome! My brain has been cycling through all the variations since I read your post. Once the craft room is done (hopefully by the weekend 🤞) I am really looking forward to trying these!
