Most homemade granola recipes call for old-fashioned oatmeal.
I always use quick oats with no issues.

Ingredients

  • 5 cups oatmeal (I used quick oatmeal)
  • ½ cup pure honey (or maple syrup)
  • 3 tablespoons coconut oil (or olive oil or vegetable oil)
  • 1 teaspoon of vanilla extract (or ground cinnamon)

Directions

  1. Preheat oven to 300°F/150°C. Spray rimmed baking sheet with non-stick spray, or a light coat of coconut oil.
  2. Place oatmeal in a large bowl.
  3. Slowly melt coconut oil in a glass measuring cup or bowl in microwave, approximately 30 seconds. Stir in honey and vanilla.
  4. Pour over oats and stir until evenly coated.
  5. Spread coated granola evenly on the baking sheet. Bake for 15 minutes, then stir. Bake for another 10 -15 minutes until the granola is a light golden brown. Watch closely the last few minutes so it doesn’t burn!
  6. Let cool completely and then transfer to an airtight container. Homemade granola will keep for 2 weeks.

This recipe is for a basic granola, which is absolutely delicious. But you can also kick it up a notch or two, by replacing 1 cup of oats with 1 cup of coarsely chopped nuts, such as almonds, pecans, walnuts, etc. At the end of baking, you can also stir in a cup or two of dried fruit, like raisins or cranberries.

  • I use these rimmed sheet pans for all kinds of roasting and baking in the oven.
  • These Pyrex measuring cups are wonderful for measuring and can be used in the microwave or sitting in a pan of hot water to melt butter and coconut oil

  1. Thanks for the link to the sheet pans. I go through so many of them and can’t find pans that last. Right now, I have the copper coated variety and I love them, but I’ve only been using them for about a few weeks so far. If they don’t work out, I’ll check into the ones you use 🙂

    1. The sheets pans are good and heavy. When I made the granola the other day, I baked some of it on a pizza pan and the granola burnt slightly because of the thinness of the pan. I have a couple of copper skillets that came with my NuWave PIC that I really like, but I haven’t tried the copper baking sheets. I’m seriously eyeing that copper brownie pan advertised on tv though. 🙂
