We have been on a major salad kick lately. Since we are making a conscious effort to eat more salad and more fruit, I decided to combine the two to make a delicious fruit salad on a bed of chopped lettuce and use up the rest of that bottle of store bought Poppy Seed dressing in the fridge. This salad and that dressing was sooooo good!

All good things must come to an end though and we used the rest of the Poppy Seed dressing. Enter my Berry Vinaigrette Salad Dressing! This dressing can be made with any kind of berry or even a combination of different berries. An added plus is that it only takes a minute or two to make!
For the salad, place chopped lettuce and maybe some spinach in the salad bowl, then top with your favorite fruits. I added watermelon chunks, strawberry slices, pineapple chunks, and a few blueberries and blackberries. For a heartier salad, add cooked diced chicken.
Kitchen Tip:
I keep a big bag of frozen mixed fruit in my freezer. The pineapple and strawberries were from that bag. I had some blackberries in the freezer, too. If you let the fruit thaw out slowly in the fridge, they aren’t too bad, even in a fresh fruit salad. It was nice to have a variety of fruit for this salad to go along with the little bit of watermelon and blueberries I had in the fridge. I generally keep cooked chicken in the freezer too. Super easy main dish salad.

Berry Vinaigrette Salad Dressing
Yield: about 1 cup, 7 – 8 servings, serving size 2 tbsp
Ingredients
- 2 – 3 Tablespoons Honey
- 2 Tablespoons Balsamic Vinegar
- 2 Tablespoons Olive Oil
- 1 teaspoon Apple Cider Vinegar
- 1/2 cup berries (hulled strawberries, blueberries, blackberries or raspberries)
- Salt and Pepper to taste
Directions
I use this little blender, which is perfect for homemade salad dressings. But any small smoothie maker will work.
- Rinse berries and cut larger berries in half.
- Blend berries, vinegars, oil and honey together till smooth, 1 -2 minutes.
- Add a quick shake of salt and pepper to taste.
- Store in the fridge and use within a couple of weeks.

I can’t get enough of it! I’ve only had Poppyseed dressing for fruit salads before, but I’m loving this Berry Vinaigrette!

Looks fantastic, a twist on what I sometimes do — add a spoonful of jam to the oil and vinegar I mix up to pour over the salad. (I put my various ingredients in a small glass jar, and put the lid on and shake like mad 🙂 Lately I am using up a jar of fig jam that someone gave me. It’s wonderful in the salad!

Much better, thank you! Oh, and just tonight I used boiled cider (basically reduced cider, rich apple flavor, in with the cider vinegar and olive oil (and of course salt and pepper). Was very yummy!
