I was struggling with ideas for dinner a few days ago. Nothing sounded good. It was just before lunch time, and I needed to take something out of the freezer to thaw. I finally just grabbed a package of skinless chicken breasts, figuring if nothing else, I’d just put together a quick sheetpan meal.

Later, while taking a break, I ran across a blog post that sounded perfect: quick and easy, flavorful and all of the ingredients were items we regularly used and always have on hand.
The inspiration recipe called for making individual meal packs. (This could easily be made into a casserole, with some additional cooking time.) I had to deviate a bit from the original directions, because I tore off my foil sheets too small. I just dug out some foil pans I had saved from some take-out meals, then used the foil sheets to cover the pans. Plus I used whatever shredded cheese I had in the fridge.
The meals were perfect! The rice was moist and flavorful, and the chicken tender.
Although these individual meals only take a few minutes to actually put together after soaking the rice, I think they would be perfect for making a day or two ahead of time, and just needing a quick reheating after a busy day. The two extra meals that we didn’t eat that evening, we reheated the next day for lunch. It just took 10 minutes in our NuWave Oven. (I added a couple of tablespoons of water to each pan before heating and I didn’t put shredded cheese on the extra meals until after they were reheated)

I followed this recipe by Rosemaries Kitchen. I have been following Rosemarie for quite a while and I am always impressed with her recipes. She is passionate about food and an avid home cook, and shares delicious healthy dishes. The food is always presented beautifully, making every meal feel like a special occasion!

Yes she does some fantastic recipes. It did turn out very good. The whole thing turned out wonderful, but the rice was amazing.

I make a Salsa Chicken in the slow cooker all the time, what a great idea to do this in individual foil pans and add rice for a one dish meal! I bet the rice is yummy!

I’m really into the Mexican flavored foods lately, and this one was wonderful. We loved the rice! The foil pans worked great for us. Rosemarie does a lot of grill cooking, so the foil wrapped is a wonderful idea too. For those that camp, these would perfect for an easy campfire meal.
