This delicious quick and easy dinner couldn’t be any easier for a simple meal after a busy day. It’s full of amazing flavors and can be made with spicy pork sausage, ground turkey or ground beef. To save some time, I like to substitute already shredded Coleslaw Mix for the cabbage and carrots listed in the recipe. This is wonderful to meal-prep for the week, too!

Easy Keto Egg Roll in a Bowl
Prep 15 minutes Cook 10-15 minutes Serves 6
Ingredients
1 ½ pounds spicy bulk pork sausage, ground turkey or ground beef
¼ cup water
3 cups green cabbage, shredded
1 medium carrot, shredded
½ teaspoon garlic powder
2 tablespoons toasted sesame oil (can substitute olive, peanut, canola, sunflower oil)
½ tablespoons fresh ginger, finely minced
2 tablespoons green onions, chopped
1 tablespoon rice vinegar (can substitute white wine vinegar, apple cider vinegar, lemon or lime juice)
2 tablespoons coconut aminos or tamari (can substitute with soy sauce)
Sea salt and black pepper, to taste
Optional for garnish:
Additional chopped green onions
1 tablespoon toasted sesame seeds
Directions:
- Heat a large high-sided skillet over medium-high heat. Add sausage (or other meat) and cook, breaking the meat into small pieces as it cooks. Once the meat is cooked through, remove from heat and carefully drain excess grease from pan.
Safety Tip: Wipe off any excess fat that drips down the side of the pan before returning to burner.
- Return skillet to heat. Deglaze the pan by adding the water to the hot pan and scrape up brown bits from the bottom of the pan with a spatula. Reduce heat to medium and add shredded cabbage, carrots, garlic powder, sesame oil, ginger, and green onions. Season with salt and black pepper, to taste, and cook, stirring frequently, until the cabbage wilts and the carrot softens, approximately 4-5 minutes.
- Add rice vinegar and coconut aminos and stir to combine. Cook another 1-2 minutes or until heated through. Remove from heat and transfer to a serving platter or bowl. Sprinkle with toasted sesame seeds, if using, and serve immediately.

The recipe I have for this actually calls for 4 1/2 C. coleslaw mix and one pound of ground beef. I used spicy sausage. Next time, I’ll use the whole bag of coleslaw mix and 1/2 pound of sausage. Loved this recipe and so easy to do. Thanks for sharing!
