Here I am with another Keto-friendly recipe. It’s still hot and humid, and we’re melting, as is the rest of North America I’m sure. So a cool crisp salad with fresh berries, topped with a delicious fruity salad dressing hits the spot. Sometimes I even add a little bit of cooked diced chicken for a heartier salad.

As I mentioned in my post Low Carb Fruit Crisp, we are trying to cut way back on carbs. The Berry Vinaigrette in a recent post is about 8 carbs per 2 tablespoon serving size, which is actually more than double the store-bought French and Italian dressings in my fridge. My bottled Poppy Seed dressing had 5 per serving. With the substitutions, this Keto-friendly Vinaigrette is about 1 carb per serving. Stick with berries to keep the carb count of your salad low.
I already had bags of frozen fruit in the freezer, so I just pulled out a few strawberries for this dressing. The other ingredients are always in my cupboard anyway AND it only takes a minute or so to whip up a wonderful fresh tasting salad dressing.

I didn’t realize there was such a difference in vinegar taste. The other version was made with Balsamic vinegar, which I had not had before to my knowledge. This one is made with Apple Cider Vinegar, which is much stronger tasting to me. I ended up adding an extra teaspoon of Splenda. It was still very good, just not as smooth-tasting.

Keto-friendly Berry Vinaigrette
Free printable recipe Yield: about 1/2 cup, 3 – 4 servings
Ingredients
- Splenda (2 – 3 teaspoons) or Swerve (1- 2 teaspoon), depending on desired sweetness
- 2 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Olive Oil
- 1/2 cup berries (hulled strawberries, blueberries, blackberries or raspberries)
- Salt and Pepper to taste
Directions
I use this little blender.
- Rinse berries, cut larger ones in half.
- Blend all of the ingredients together until smooth, 1 -2 minutes.
- Add a quick shake of salt and pepper to taste.
- Store in the fridge and use within a couple of weeks.
To make the salad, put a handful of salad greens (chopped lettuce, spinach chard, etc) in a salad bowl and top with a half cup of berries. Add cooked diced chicken, if desired.
